Pork Egg Rolls
Pork Egg Rolls Recipe
1 package of Egg Roll Wrappers- usually found in the produce section of grocery store
2 eggs
½ Stick of Butter
2 pounds of Ground Pork
2 packages of pre-mixed standard Cole Slaw mix
Sauce Mix- Combine all below ingredients together and mix thoroughly with a whisk
2/3 cup of Chicken Broth
4 Tablespoons of Soy Sauce
3 Tablespoons of Brown Sugar (I use Splenda Brown Sugar to save on carbs)
1 Tablespoon of Sesame Oil
2 Tablespoons of Corn Starch
2 Teaspoons of Minced Garlic
2 Teaspoons of Ginger Paste
½ Teaspoon of Black Pepper
Combine Cole Slaw Mix and Sauce together in a large pot on medium heat. Stir until Cole Slaw mix is completely covered and mixed with sauce. Lower heat to medium low.
Brown Pork on Medium High Heat. Stir frequently to break the pork up into smaller pieces.
Combine Pork and Slaw/Sauce Mixture in large pot. Stir until evenly mixed and distributed.
Put 2 eggs in a small bowl and whisk thoroughly
Melt ½ stick of butter in a separate small bowl
Remove Egg Roll wrapper and place on plate. Place egg roll wrapper so that it is pointed side up, it will be in the shape of a diamond. Take a brush and coat the outer edges of the wrapper with egg wash. Place desired amount of filling on the bottom 1/3 of the wrapper and roll the egg roll as seen in the video. Place egg rolls on a cooking sheet lined with parchment paper. Brush both sides of egg roll with butter. Bake at 350 for 25 minutes or until golden brown, flipping the egg rolls ½ way through the cooking process. Let cool for 15 minutes and enjoy.

Baked Spaghetti
Baked Spaghetti Recipe
Ingredients
1 Aluminum Pasta Pan (13.25x9.65 or any pasta pan found in baking section at store)
2 Pkgs Thin Spaghetti Noodles
2 Blocks Cream Cheese
1 16oz package of shredded Mozzarella Cheese
1lb Ground Beef
1lb Ground Sweet Italian Sausage
1 28oz can Tomato Sauce
1 15oz can Crushed Tomatoes
1 12oz can Tomato Paste
2 Cups Chicken Stock
2 Tbsp Extra Virgin Olive Oil
1 White or Sweet Onion
5 Tsp Minced Garlic or 5 cloves of Garlic
2 Tbsp Basil Paste
2 Tsp Oregano
2 Tsp Salt
1 Tsp Black Pepper
½ Cup Fresh Finely Chopped Parsley
Directions
Spaghetti Sauce
Add 2 Tbsp Extra Virgin Olive Oil with Garlic and Onions. Sautee the Onions and Garlic on Med heat until the onions are translucent.
Add Tomato Sauce, Crushed Tomatoes, Tomato Paste, Chicken Stock, Basil Paste, Oregano, Salt, Pepper, and Parsley to the Onions and Garlic. Mix thoroughly and heat on medium heat.
Brown Beef and Sausage then drain fat off the cooked meat.
Add meat to the sauce and mix thoroughly. Reduce heat and simmer for approximately 40 minutes. Stirring frequently.
Bring salted water to a boil for Spaghetti Noodles. Be sure to salt the water well. Cook Spaghetti noodles for approximately 8 minutes.
Keep ¾ cup of pasta water and set it to the side. Drain the rest of the water off the noodles.
Add pasta water and cream cheese to the noodles and toss/mix thoroughly until all the noodles are coated with cream cheese.
Add thin layer of sauce on the bottom of the aluminum pan.
Add Noodles to the pan on top of the thin layer of sauce.
Cover the noodles with thick layer of sauce
Cover the sauce with layer of Mozzarella Cheese
Bake in oven at 400 degrees for 15 minutes or until cheese is starting to brown
Remove from oven and let rest for 10-15 minutes

Bruschetta
Bruschetta Recipe
Ingredients
6 diced and cored Roma Tomatoes
4 Tbsp Extra Virgin Olive Oil
2 Tbsp Basil Paste or 1/3 cup Freshly Chopped Basil
5 Tsp of Minced Garlic or 5 cloves of freshly cut garlic
1 Tsp Salt
1 Tsp Balsamic Vinegar
½ Tsp Black Pepper
1 French Baguette (or any type of hard crusted bread)
1 8oz package of Shredded Parmesan Cheese
Directions
Mix 2 Tbsp of Extra Virgin Olive Oil with 1 Tsp of Minced Garlic in a small bowl and allow to sit at room temperature for about 30-40 minutes
Dice and Core the Roma Tomatoes; be sure to remove the cores so the tomatoes don’t have too much liquid
Add 2 Tbsp of Extra Virgin Olive Oil, 4 Tsp of Minced Garlic, 1 Tsp of Salt, 1 Tsp of Balsamic Vinegar, and ½ Tsp of Black Pepper to the Roma Tomatoes. Stir ingredients together well until all the tomatoes are coated with the other ingredients.
Allow the Tomato mixture to sit at room temperature for approximately 15-20 minutes
Slice the baguette at an angle and brush the garlic infused olive oil mix lightly on both sides of the bread. Sprinkle a light amount of the shredded parmesan cheese on the top of the bread. Place bread into the oven and broil until the edges of the bread are slightly brown and cheese is crusty on the top. Remove bread from oven.
The Bruschetta is ready to serve on the bread; Enjoy!!!
